Honey Glazed Carrots with a Nutty Twist and Lean Cuisine
Even though I am a homeschooling mom, life is anything but ordinary or routine. Often times we need to run out the door for something, especially right before an event. While it is easy to figure out a quick dinner for the boys, I am often the most difficult one to figure food out for that will contain protein and be healthy.
Lean Cuisine meals only take about four minutes in the microwave, which is a super fast low maintenance way for me to eat on the go without adding extra calories.
We made a quick trip to Sam’s Club to see what meals were available. Even though it is the crazy holiday shopping season, running in during the last half hour they were open meant hardly any shoppers. It was as if we had the store to ourselves, although my boys were very disappointed there were not any sample carts.
In the frozen food section the Lean Cuisine Asian Flavor 6-Pack was a great choice. I loved how it was wrapped in plastic, which meant I could carry it to the car easily instead of juggling six individual ones.
I chose a healthy meal to eat. The Sesame Chicken was a great choice, with plenty of protein and loved the flavor of the noodles. Ginger Garlic Stir Fry With Chicken has a little bit of a kick to it. The snap peas are my favorite part. Chicken Teriyaki Stir Fry also has the same delicious snap peas.
Since this meal was just for me, I wanted to be sure my boys ate vegetables with their meal so I created a quick recipe. While I was shopping for the frozen meals, I spotted the nut display and decided to add my favorite nuts to my recipe.
Honey Glazed Carrots with a Nutty Twist
Ingredients:
- 4 cups baby carrots
- 1 cup natural honey
- 1 cup honey mustard
- 1 tablespoon brown sugar
- 1 pat of salted sweet cream butter
- 5 cups water
- 1 cup whole cashews (optional)
Instructions:
Bring water to a boil and boil the carrots for 5 minutes. Drain carrots. Return to pan and melt the butter over medium low heat. In a separate bowl mix the honey, mustard, and brown sugar. Pour over the carrots and cook for 3 minutes. Cook the Lean Cuisine meal in the microwave according to directions, which is approximately 4 minutes, while carrots continue to cook. Stir occasionally. When the microwave goes off the carrots are done. Serve and sprinkle with cashews.
Serves: 4-6
Prep time: 5 minutes
Cook time: 12 minutes
Note: This is a really sweet dish. Remove the brown sugar and decrease the honey by half if you don’t want it to be too sweet. The cashews are optional but they do balance out the sweet taste with a little bit of salt.
This dish I created blends nicely with the Lean Cuisine frozen meals and was easy to do, especially since I am not a cook.
